3. *Soak slices*: To remove excess starch, soak the potato slices in cold water for at least 30 minutes. After soaking, drain the slices and pat them dry with paper towels.
4. *Fry potato slices*: Carefully add the potato slices to the hot oil in batches, being careful not to overcrowd the pan. Fry for around 3-5 minutes or until the slices are golden brown and crispy.
5. *Drain excess oil*: Using a slotted spoon, remove the fried potato slices from the oil and place them on a paper towel-lined plate to drain excess oil.
6. *Season*: Sprinkle the potato chips with salt and any additional desired seasonings.

- For an extra crispy texture, try double-frying the potato slices. Fry them once at a lower temperature (around 325°F) for 3-4 minutes, then increase the temperature to 375°F and fry for an additional 2-3 minutes.
- To make kettle-cooked potato chips, fry the potato slices in small batches in a shallow pan with about 1-2 inches of oil. This will give the chips a more rustic texture and flavor.
